Soba lunch with Italian salad cooked by jordgubbsglass

Soba made from Soba flour (buckwheat)-healthy and very tasty.

Boiled Soba can be a very tasty and simple lunch. We usually use a special dip souse for the Soba, Soba-tsuyu, made by Soy souse, Mirin (or Sake) and Dashi(Japanese soup stock), mixed with water. You can also buy ready made “Soba-tsuyu” at the supermarket. Put some spices in your soba-tsuyu, such as leek or red pepper. I prefer Yuzu-gosyou (Yuzu Pepper) ,which is originally from Kyusyu in southern Japan.

A very important thing to remember when you make Soba is that you have to wash it with sufficiently cold water just after it has been boiled. You really have to wash it! The process removes the `slimy` part which covers the outside of the soba. After that, put it in a kitchen basket to remove the water.

Amazing! You can by Japanese food in a Japanese food shop in Stockholm or order it via the Internet!!

The dish is not oily at all and it can be a little bit boring, but if you eat it together with Tenpura for example, it is very tasty!
However, we ate Italian salad with Soba. This is a quite strange combination but tastes nice. Tomato, broccoli and mozzarella with Italian balsamico!

The Fish
