胡麻和えの方が一般的な気もしますが,くるみ和えはもう少しこってりとして好きです.

病み上がりにはとてもやさしいブランチです.
Komatuna is very similar to spinach. The common way to eat the vegetable is just boiling it with a little bit of salt.
An important thing is to put it in cold water immediately after boiling and wring the water out. Then you can eat it with soy sauce, Dashi or Ponzu. We called this “Ohitashi”

A more advanced way to eat it is mixed with some seasoning, “Aemono”.
Mixed with grinded sesame seeds sauce is very common. But also grinded walnut sauce is very tasty! It tastes richer than sesame sauce.

The Japanese grinder called “Sulibachi” and the stick to grind called “Sulicogi”. You can grind nuts, herbs, and fish, meet etc. And you can use this like a salad bowl as well. This is a very useful tool.
